What’s for Dinner: Bacon Wrapped Asparagus

When vegetables are wrapped in bacon the world is happy. Unless you are a vegetarian. I can’t help you if you’re a vegetarian, but I’m sure there is some sort of bacon meat substitute product out there. And, if it tastes anything like the real deal, I’d say this is the recipe to use it in.

 

I’ve gone totally asparagus crazy. I generally shy away from veggies with any sort of stalk: celery, cauliflower, broccoli, and until a few years ago asparagus. But then someone grilled some for me. And then drizzled it with olive oil and lemon. I was a convert and look forward to springtime when the stalks are in abundance at every grocery store in town.

 

 

When I came across this recipe, I knew it would be good. Bacon, brown sugar, garlic, sesame seeds, and sesame oil make up the rub which covers the asparagus before it’s roasted to perfection. The little bundles come out crispy and flavorful.

 

 

If you haven’t reached your asparagus max yet, give this a shot! We ate this a couple nights ago and I’m still thinking about it. And, seeing these pictures today has me inspired to find an asparagus risotto to make this weekend.

 

I told you, I’m obsessed.
